Chai tea is a blend of black tea and spices. There are no fixed recipes and each region of India has their own focus. Our Peacock Chai proudly resists artificial flavours which are much cheaper and often stronger than natural spices. Instead we’ve turned to real organic spices to bring the life and fire into what has become one of our most popular blends.

Jasmine Pearl Tea
Jasmine Pearl Tea
An incredible naturally scented green tea using an ancient technique that has been enjoyed for over 900 years (also known as Buddhas tears).
The tea bud and tea leaves are plucked and rolled into a perfect pearl (all by hand). Fresh jasmine flowers are harvested, kept chilled and carefully layered over the tea as the sun sets. As the flowers gradually warm over night the jasmine blossoms open and release their perfume slowly - the tea absorbs some of the perfume transferring the natural fragrance. The next morning the jasmine flowers are carefully removed and the process is repeated 5 nights in a row with each cycle requiring about 10kg of flowers for every 1kg of tea. These are the highest grade of Jasmine Pearls available.
The flavour is sweet, smooth and naturally aromatic.

A delicious green tea roasted with brown rice gives an interesting combination of vegetal, grassy, and nutty flavours. Genmaicha is traditionally a Japanese style of green tea.
Where is this tea grown?
This particular tea is grown in a boutique tea garden in Victoria’s alpine region. This green tea has a strong flavour with a subtle hint of Australian eucalyptus from the bush surrounding the plantation.
Origin story of this tea:
The oldest origin story is of a servant, named Genmai, who clumsily spilled rice in his samurai-master’s green tea brew. The samurai was enraged and lopped off Genmai’s head for the unforgivable indiscretion. The samurai sampled the tea and, in a stroke of either remorse or genuine appreciation for this new tea, proclaimed the tea as a wonderful flavour combination. The samurai declared that only this tea would be served in his household in honour of its creator. The tea became known as the tea of Genmai or Genmaicha.
A more likely story, however, recounts a less dramatic history. Farmers in the early 1900 near Kyoto, Japan, began adding brown rice to green tea to make it cheaper. It was thought of as the working class tea. Today, however, Genmaicha is enjoyed by all levels of Japanese society and is considered a valued part of Japan’s long and proud tea culture.

White tea is produced from the tea plant, camellia sinensis, by simply drying the buds. It is the tea with the least amount of processing and entirely harvested and processed by hand. It takes approx. 10,000 buds to make one kilogram of Silver Needles.
The plucked buds are intact and beautiful. Once hydrated it’s possible to even unfurl them displaying the little plant veins, the leaf serration and protective fur, as if the leaf was only just plucked.

This classic breakfast tea is harvested entirely from one tea garden at a pristine mid-altitude location in Sri Lanka. The plantation is near a natural rain forest making the tea part of an active biodiverse ecosystem.
Graded as an orange pekoe pluck; this black tea is a high grade premium leaf. It is aromatic, bright, and delicate to drink as a black tea. If steeped for a little longer, it becomes strong and bold enough to enjoy with milk.
